Punjabi Gajar Ka Zarda


Ingredients

Basmati rice   1/2 kg
Salt   1/2 tsp
Carrots grated  2 cups
Coconut sliced   1/2 cup
Raisons    1/2 cup
Almonds  20 blanched whole
Pistachio blanched  20 whole
Green cardamom    6
Ghee   1/2 cup
Sugar    1/2 kg





Method

Soak rice for 30 minutes in a pan boil water with 1/2 tsp salt, boil rice till done, drain and keep aside. Heat 1/2 cup ghee add 1/2 cup water with 1/2 kg sugar, cook stirring till sugar dissolves completely add boiled rice, mix well cook uncovered on high flame for 10 minutes, when water dries add grated carrots, mix well, lower flame and leave it on dum for 15 minutes

Remove in a platter, serve garnish with nuts, coconut slice and raisons.
